Zucchini ~ Carrot ~ Raisin Muffins

Ingredients:

  • 2 cup Carrot
  • 1.5 cups raisins
  • 2 cup Zucchini
  • 3 Eggs, large
  • 1 cup rolled oats
  • 2 cup All-purpose flour
  • 2 tbsp Baking powder
  • 3 tsp Cinnamon, ground
  • 2 tsp Salt
  • 3 cups Sugar (I used organic cane sugar)
  • 3 Whole wheat flour (or regular is fine too)
  • 1.5 cup vegetable oil

Directions:

Preheat over to 350 degrees.

In a bowl mix eggs & oil.  Add carrots and zucchini (make sure to squeeze out all the excess water first)!

Mix dry ingredients.  Add wet ingredients to dry ingredients and stir.

Line your muffin tin with paper liners or spray with nonstick cooking spray.  Fill each muffin cup 3/4 full and bake about 15-20 minutes until toothpick readiness test (insert toothpick into muffins until it comes out clean).

Makes 24 muffins.  The muffins freeze very well too!

Enjoying the harvest

This morning was a lot of fun.  I made homemade Raspberry Jam.  It turned out so delicious and not too sweet. It was also surprisingly easy. I grew up in a family where everything was homemade, but somehow managed to skip the lesson on making jams.  My family and friends will enjoy this harvest for a while.  I hope you enjoy this recipe my husband and I created in our kitchen! Raspberry Jam

Homemade Raspberry Jam

Ingredients:

  • Raspberries (6 cups)
  • Pectin (1 packet, 1.75 oz)
  • Sugar (4 cups – 2 cups cane sugar & 2 cups granulated sugar)
  • 2/3 cup water

Directions:

  • Place half of the raspberries in a large bowl (3 cups).  Add 2 cups of sugar at a time, very gradually.  Add the remaining 3 cups of raspberries gradually when adding the sugar.
  • Add pectin and 2/3c cup water .  Bring to a boil for ONE minute stirring constantly.
  • When pectin is ready pour into berry mixture lightly stirring until sugar is dissolved.  It took me about 15 minutes until sugar was dissolved.  Then place in glass jars  (Mason Jars) and leave on counter at room temperature for 24 hours.  Then, freeze or place what you want to immediately use in the refrigerator.

 

Pancakes (& Vegan)…must TRY!!

Ingredients:

  • 4 tablespoons pure maple syrup
  • 2 tablespoons + 1/2 teaspoon vanilla extract
  • 2 tablespoon apple cider vinegar
  • 1 cup unsweetened applesauce
  • 1.5 cup unsweetened almond milk (I used vanilla)
  • 1 teaspoon salt
  • 4 cups rolled oats (Quaker or Irish oats)
  • 2 teaspoon baking powder
  • 2 teaspoon baking soda
  • 2 teaspoon cinnamon
  • 2 tablespoon melted coconut oil (this goes at the very top of the layers)

Directions:

Always start with the wet ingredients first. Layer those in your blender. Then add the dry ingredients and top with coconut oil LAST. Blend for about 45 seconds.  Heat up a non-stick skillet and grease with method of choice. I use non-stick cooking spray (olive, vegetable or avocado oil).  I heat my griddle to 350 degrees. I always top with organic pure maple syrup and fresh berries.

Note: you could always half the recipe above.

Momma’s Acai Bowls

This was super delicious and pretty easy.

Ingredients:

  • 1 cup Almond milk
  • 1 cup Frozen berries
  • 1/4 cup Greek Yogurt (or protein powder)
  • Mini chocolate chips – to taste)
  • Granola (I like KIND oats & honey clusters) – 1/8 cup each layer
  • Fresh fruit (Berries, banana, mango,etc.) – to liking
  • Honey (to drizzle on the top)

Directions:

  1. Blend almond milk, frozen berries, & Greek yogurt in a blender. If too thick add more almond milk
  2. Layer granola on the bottom of our bowls, then the smoothie mix, top with mini chocolate chips, repeat
  3. Lastly, top with fresh blueberries, raspberries, & banana, then drizzle with honey.  Bon appetite!
