Bell Pepper Nachos


This is easily one of my favorite meals and I hope you enjoy!


  • 1 lb ground beef, bison, turkey or chicken.  Whatever is in your freezer.
  • 1 cup of fresh salsa (preferable no sugar added)
  • 4 bell peppers.  I cut each bell pepper into thirds.
  • Nachos toppings (sour cream, cheese, black olives, avocado, fresh tomatoes, cilantro)

Cook the ground beef, once done, drain any fat if necessary, then add the salsa to the cooked meat.  Pour or stuff this over the bell peppers.  Top with cheese.  Bake at 350 degrees for 10 to 12 minutes.  Top with all of your favorites and enjoy! Serves 4.
